Hi Guys!
I hope you all had a wonderful Easter weekend. I finally hit up the Carrboro Farmer’s Market this Saturday and stumbled across sweet potato habanero hot sauce. Yes, you read that right. You know in cartoons when their eyes pop out of their heads. That pretty much sums up how I reacted. At least on the inside. On the outside I tried to keep it cool, but I probably looked like a crazy person grinning from ear to ear. I can’t wait to use it. I’m thinking I may do a burrito or taco of some sort using ground turkey, black beans, and a shredded cheese blend with pepper jack. I also bought a jar of curried peach preserves. I’ll be making some epic sandwiches with that. Think turkey breast and goat cheese.
Enough food talk (yeah right?!). This week I’m all in on this job hunt. I’ve figured out some different job titles to search for so I’ve been finding more interesting positions which is good. My bare minimum goal is to submit 7 job applications each week. Truth be told I need to be upwards of 20-25. It’s been stressful though. These aren’t just 20-25 applications submitted anywhere. These need to be for positions that I’m actually interested in otherwise it’s going to be hard to convey enthusiasm in a cover letter or an interview. I’m hoping that between now and graduation (which is now less than a month away) I can secure at least three solid leads.I also have two more meetings scheduled this week with my committee members. I must say that I’ve really enjoyed the meetings I’ve had so far. I’ve gotten some really insightful advice about navigating post-grad life and making a name for myself as a researcher. They’ve also all really liked the gift I got them. I ended up getting them a gift related to something I found in my dissertation research. It just made it that much more meaningful.So that’s my life right now. Exciting as all get out. Tell me what you’re working on this week below so I can live vicariously through you.
