Happy Monday Guys! I’m finally sharing my no added sugar cookie recipe from my no added sugar challenge. Sorry for the delay. This thing called life has hit me hard. Work has been hectic with some travel and big reports due and last week I did a somewhat spontaneous trip to NOLA. So much fun! It was a short trip but I feel like I covered a lot of ground. I’ll be doing some posts on what I ate, where I stayed and all that good stuff. And yes, I hit up Cafe Du Monde for beignets! They were just as delicious as I’d imagined.
But back to these no added sugar cookies. While they’re no beignets, they’re yummy in their own right. And when I say no added sugar I mean no added sugar. I didn’t add any sugar to the batter and all of the ingredients I used also had no added sugar. Don’t worry, the extra ripe bananas provide the sweetness, and the oats and shredded coconut give the cookies a nice texture and some extra flavor. Check out the recipe below for my no added sugar cookies.
Here’s what you’ll need:
Ingredients:
1 cup of mashed bananas, extra ripe
1 cup of rolled oats
1/4 cup almond butter, no sugar added (I used Barney’s, “no sugar, no salt added”)
1/4 cup unsweetened shredded coconut, lightly toasted
1 tbsp vanilla extract
1 tsp cinnamon
1 large egg
Directions:Combine all of the ingredients in a medium sized bowl.Use a cookie scoop or a 1/4 measuring cup and scoop out batter.
Bake at 350 degrees for 8-10 minutes
Enjoy.So if you’ve got some ripe bananas and you’re not feeling banana bread, make these instead. They’re quick and easy to make and quite satisfying. You can have them as a snack, an after dinner treat, or if you want you can make them bigger and have them as a breakfast cookie.
