2016 NC State Fair

Happy Friday’s Eve, Guys! Today, I’ve got a special post for you. Since I submitted my final proposal last Friday and my defense isn’t until next Friday, I was planning to take a little trip to go apple picking this week. The closest apple orchards are a few hours away so I was going to make a mini trip out of it. I planned to drive up on Wednesday, stay at a cute little B&B for a night, and then go apple picking the next morning. Sounds great, right? Well when I looked into the different orchards I ran into a little problem. No apples! I checked some of their websites and they said that due to the beautiful weather and large crowds coming to pick apples they no longer had apples available for the public to pick. They did note, however, that they were still selling pre-picked apples.

What?!

I’m not driving 3+ hours and staying overnight to buy pre-picked apples. I can go a mile up the street and do that. I was bummed but I came up with a pretty awesome backup plan – finally check out the NC state fair. I had never been and this seemed as good a time as any to go.

Yeah I know. But I tried to do the cute, healthy thing first. Since that didn’t work I moved on to the indulgent, deep-fried thing:)

What did I do at the state fair? I ate, I walked around, and I ate while walking around. Below check out the four things I ate that you’re only going to see at the NC State Fair.

Blueberry Funnel Cake

Gobblin GourmetGobblin GourmetFirst thing I tried was the Violet Vampire funnel cake from Gobblin’ Gourmet. It’s a blueberry infused funnel cake with powdered sugar, homemade blueberry pie filling, fresh whipped cream, and a white chocolate drizzle.

Wowsers right. The funnel cake was $8 which may seem like a lot but it is a “gourmet” funnel cake and it’s big. As I was walking to a table with it, people were literally staring at me like what is that? You could see it in their eyes. Two women stopped me on the way to my seat to ask me what it was and where I got it from. Another women sitting at the table across from me said, “Wow that looks good.” It was a sight for sore eyes. For presentation they get a 9.5. For taste, I’ll give them a 7. It was good but I didn’t taste the white chocolate drizzle and the blueberry pie filling was good but not great.

Next up was a bacon pimiento cheeseburger egg roll. While I was happy that the portion size was smaller since I knew there were other things I wanted to try, I wasn’t happy about the $6 price tag. I know that similar to airport food and movie theater food fair food is  expensive, but $6 for a single egg roll seems like a stretch to me.

Bacon Pimiento Cheeseburger EggrollThe egg roll tasted good but I didn’t detect that much of the bacon. For all of the hype and the price I had much higher expectations. Overall I don’t regret trying it but I would not get it again.

Caramel Apple Ice Cream

The best things in life are worth waiting for. No truer words can be said about the 2016 state fair ice cream flavor winner – caramel apple crisp. The line was intimidating.

NC State FairFortunately the folks running it had it going like a well oiled machine, and the wait only ended up being a little under 20 minutes. Boy was it worth it. This was the best thing I ate hands down. It was udderly (get it?!) delicious.

It was cinnamon apple pie flavored ice cream with pie pieces and a caramel cinnamon swirl. Wow is all I can say. And for $5 for a very healthy sized portion it was a great deal in my opinion. I wish it was sold in stores. It’s probably for the best that it’s not though.

Caramel Apple CrispIn years past I’ve heard about Howling Cow being one of the highlights of the NC State fair. Come to think of it, in some of the news segments I saw I remember there being long lines so I should have known I’d have to wait. Again it was totally worth it. The guy in front of me was telling me how consistently great it is, and how he and his family always come and get this ice cream. I can see why.

Captain Neil's SeafoodCaptain Neil's SeafoodThis crab dip was the winner of best new food at the fair. When a dish wins an award like that it’s kind of demanding that you try it out to see why. After tasting it I thought it was really good. Award worthy, perhaps in the savory category. Considering the caramel apple ice cream also counted as a new food, I don’t think it beat that out. The dip was $10. Pricey, but again it’s fair food and it has crab in it so it’s to be expected.

Captain Neil's Crab DipCaptain Neil's Crab DipWhen I got back I had a ton of water as well as some of this Kevita Tumeric Ginger kombucha drink. I like the taste of these Kevita drinks when I want an alternative to water that has some fizziness to it. I also like the kick it has with the tumeric and ginger in it.

Kevita Apple Cider Vinegar TonicAfter all that eating you’d think I went to bed that night feeling bloated but surprisingly I didn’t. I realized that I did a few things while I was at the fair that helped. For any of you who are planning to go to the NC state fair or any other fair, I have a few tips for you on how to mitigate any feelings of guilt.

One, be real with yourself. I knew when I was going to the fair that I was going to be eating unhealthy food. The foods I ate had no redeeming qualities aside from being yummy. Since the fair is the place to debut all foods decadent, what I did was plan ahead. Before I went I figured out the foods that I had to try. When I got there I made sure that I tried those foods first.

While I was there, other items caught my attention like bacon smores, krispy kreme burgers, and jalapeno pimiento cheese and bacon hushpuppies with sriracha bang bang sauce. However, I told myself that I needed to try what I came for first and then circle back to those other foods if I still wanted to.

NC State Fair 2016NC State Fair 2016NC State Fair 2016NC State Fair 2016In coming up with my list of foods to try, I prioritized foods that a) I knew I would only see at a state fair (if it was something I felt like I could get a restaurant, or say a specialty candy shop then I passed on it), and b) I would only see at the NC state fair. B was very important. Sure I would have loved to try a red velvet funnel cake but I’ve seen those before. What I hadn’t seen before was a blueberry infused funnel cake.

Two, don’t know where you’re going. If you haven’t been to the NC state fair it’s pretty big. Instead of asking for directions or trying to find a map, I decided to just keep walking until I came across everything naturally. I got to the fair at about 1:15 and left around 4pm. I probably spent a total of 20 minutes seated so I was walking around for ~2.5 hours. It turned out to be a great way to get physical activity in between (and during) bites. It was also a nice way to see more of the fair than I might have otherwise. Had I not taking this approach to wandering I may not have come across a specialty nut stand and purchased a delicious bag of spicy hot honey cashews.

NC State Fair 2016Three, don’t be afraid to throw away food that isn’t amazing. For me I’m really big on just being able to try different foods. If I can find out how something tastes I’m content with only getting a few bites. I only commit myself to finishing food that tastes really good. Think of the space in your belly as prime real estate. It’s limited so you want to reserve that space for the best. While I liked the blueberry funnel cake it wasn’t amazing so I didn’t eat all of it. You want to save room for the things that you’re really going to enjoy. For me this was the ice cream. It was incredibly delicious and I ate every last spoonful.

So those are my tips. By using them I was able to try everything I wanted to try, enjoy the food that was really good, and not feel guilty about any of it. I came, I ate, and I conquered.

Snack Easy Series #5: All PoPcorn Edition!

Happy Monday Guys! Did you enjoy the first official weekend of fall? I did. For one, I gave my apartment a thorough cleaning on Friday. Between studying for  my comps (which I passed by the way!) and working on my proposal, my apartment hadn’t had a deep cleaning in a while. I vacuumed, scrubbed the shower, toilet, and sink, swept the kitchen, dusted, and wiped down surfaces. I also did and folded laundry. It felt amazing when I was done. There is nothing better than a clean space. After that I sat down with some tea, lit a candle even though it was still way too warm for that, and worked on my proposal. I submitted a draft to my advisor on Friday evening so he’d have time to review it in advance of our meeting tomorrow. That means that I get one more day to bask in blissful ignorance before I get his feedback. Pray for me!

Moving on to a tastier topic, I’ve got this month’s Snack Easy round up for you. Popcorn lovers rejoice, because this one is an all popcorn edition! Besides prayer, hard work, and staying active, snacks are a big part of what’s getting me through my PhD program. When I talk about some of my favorite things to snack on, I have to talk about popcorn (which made this all popcorn edition a no brainer).

I’m big on finding ways to make my meals and snacks a little more enjoyable. Besides doing things like turning off the tv when I eat and sitting down at a table, I also like to pay attention to presentation. This includes everything from how the food looks to what I put the food in.

I wasn’t sure how I’d feel about this one, but I’m so glad I decided to give it a try. The dusted dark chocolate gives this popcorn a nice cocoa flavor but you can detect a hint of salt. It’s a great balance. I’ve only seen this particular flavor at Harris Teeter and once at Publix. It’s not a flavor I buy all the time as I have to be in a specific mood for it, but when I am in the mood for it, it’s great. I’d definitely give this one a try if you’re a chocolate lover.

The lime is really faint on this one, so don’t be turned off by the name. It does come through ever so slightly at the end of the bite which I like. The trick here is to shake the bag before you pour out the popcorn because the lime seasoning tends to fall to the bottom of the bag. As you can tell by the name there’s something that’s light and fresh about this one. The hint of lime flavor gives it a nice, fresh twist. I really enjoy this popcorn and highly recommend it. My one caveat is that if you want to buy it because you’re expecting it to have a strong lime flavor, look else where. Otherwise, get it!

This one is so simple but it’s so good! The coconut oil really comes through but not in an overpowering way. The point is I really like this one. Unlike some of the others I don’t need to be in a special mood for this one. I could eat it whenever.

A part of the reason it took me so long to get this all popcorn edition up was because of this flavor. In true Chi fashion, I had to find a snack I liked that was near impossible to pin down for a repeat purchase. When I was traveling a few months ago I came across this popcorn at Walmart, but when I got back home I could not find it anywhere. I must have gone to four different Walmarts looking for it. As fate would have it one day as I was perusing the aisles at Target these caught my eye. I wasn’t even looking for them but there they were. And they were on sale. Jackpot! I may have let my mildly hoardish tendencies come through by grabbing four bags (since it took me so long to to find them I wanted to make sure I had a stock). I’ve yet to find these at a Walmart, but hopefully you’ll have better luck than I did. These have a nice BBQ flavor to them. The bag says spicy but don’t be alarmed by it (they’re not all that spicy). Similar to the dusted dark chocolate this is one that I have to be in a specific mood for. It’s still good though for when I want to switch things up.

Roasted Jicama Shoestring Fries

Hi Guys. Happy Monday! This week I’ve got a recipe for you that calls for a vegetable you may have never heard of before. If you haven’t heard of jicama allow this to be your first tasty introduction. Jicama is a Mexican indigenous plant that kind of looks a like a turnip.

When I read that jicama tasted like a cross between a potato and an apple, my interest was quickly piqued.  While you can have jicama raw, from the description I thought it would make for a great fry. Well me being me, I had to test it out.

What can I say other than winner, winner jicama dinner. These came out crispy and savory. On the front end of the bite you get more of the potato flavor, while the apple comes through more on the tale end.  It’s a delightful savory and faintly sweet combo. The ingredients list for this recipe is super short. In fact you only need three things: the jicama itself, olive oil cooking spray, and a pink salt spice blend.

INGREDIENTS:

1 pound of jicama

Olive oil cooking spray

1 tablespoon of The Gourmet Collection Mediterranean Himalayan Pink Salt Blend

DIRECTIONS:

Preheat the oven to 400 degrees.

Chop and discard the jicama skin (unlike a potato and an apple the skin is not edible)

Thinly dice the jicama.

Lay down some parchment paper and lightly coat it with cooking spray.

Lay your chopped jicama flat on your baking sheet.

Lightly coat with cooking spray.

Take one tablespoon of your pink salt spice blend and sprinkle it over the jicama.

Roast in the oven for 20 minutes.

After 20 minutes, turn the oven off and let the fries sit in there for 3 more minutes to crisp up a little more.

Take out of the oven, and let cool for a couple minutes.

This will make about 2 servings but you can easily scale this recipe up to make more.

Minimal “Labor” Day Sriracha BBQ Chicken Wrap

Hi Guys. Happy Labor Day! For my first post on the new site, I wanted to bring you a yummy and super simple barbecue chicken wrap.  Check out the recipe below:

Sriracha BBQ Chicken Wrap

INGREDIENTS:

1 1/4 cups of Trader Joe’s Sriracha Roasted Garlic BBQ Sauce

1 3/4 – 2 pounds of boneless skinless chicken breasts

1 15 oz. can of corn

1 15 oz. can of pinto beans

1.5 cups of shredded carrots

1.5 cups of diced red onion

1 cup of diced green bell peppers

1 cup of jalapeno slices

3/4 tsp sea salt

1/4 teaspoon of black pepper

1/4 teaspoon of ground jalapeno

8 whole wheat tortilla wraps

Add on top:

Jalapeno & honey goat cheese (Trader Joe’s)

Shredded reduced fat fiesta cheese blend (from Walmart)

DIRECTIONS:

Lay your chicken breasts flat in the slow cooker and cover with the barbecue sauce. Cook on low for 5-7 hours (time will vary depending on how quickly your slow cooker cooks food. For me it took about 5 hours).

Next, put a large pot on the stove and turn it on to a medium-high heat. Lightly coat the bottom of the pot with olive oil cooking spray and saute the onions and bell peppers on medium-high heat for 3-4 minutes.

Drain the excess liquid and add the corn and pinto beans. Take about a cup of the barbecue sauce from your chicken in the slow cooker and add it to the pot of veggies. Then add your sea salt, black pepper, and ground jalapeno.

Cook on medium-high heat for 5 minutes.

Add, the carrots and jalapeno slices and let simmer on low for an additional 10 minutes.

Take your cooked barbecue chicken and shred with a knife and fork. Toss the shredded chicken with the remaining sauce in the slow cooker.Sriracha BBQ Chicken WrapSriracha BBQ Chicken Wrap

Add the shredded chicken to the pot with your veggies.

Take the shredded chicken mix and put it in the center of your wrap. Sprinkle some of the shredded cheese blend and the jalapeno and honey goat cheese on top.

Depending on how much filling you add to your wraps, this will make between 6-10 wraps. I added about a cup

Meal Option #2:

If you don’t care to make this a wrap, you could also toss the mix with some shredded iceberg lettuce for a delicious salad.

Snack Easy Series #4

Hi Guys! How are you? I hope life’s treating you well. You would think that with my comps behind me things would have calmed down a bit. Oh no! There’s so much going on. The semester officially kicked off this past Tuesday. While I’m not taking any more courses, between my TA duties, working on my dissertation proposal, and looking for jobs (eek!), I’m keeping quite busy. I’m also working on a few exciting blog and business projects. I can’t wait until I can share them with you!

Right now I’m coming to you with the August installment of the Snack Easy Series. This month I’ve got two types of jerky, a tropical inspired crisp, a black bean snack, and some healthy oatmeal cookies.

I wanted to start off on a high note. These oatmeal bites were my favorite snack of the bunch. So delicious. If you didn’t tell me they were “healthy,” I wouldn’t have guessed it. Somehow they taste like a real oatmeal raisin cookie, but they manage to be low in calories and sugar and high in fiber. It’s some kind of wizardry Alyssa’s got going on here. These would be a great way to satisfy a sweet tooth craving with zero guilt. I highly recommend trying them. Price wise they’re not the cheapest, but they’re also not the most expensive. One package costs $4.29 and contains 4 servings (one serving is 2 cookies). That gives it a cost per serving of a little over a dollar. I don’t buy these every time I go grocery shopping, but I do pick up a package when I want a sweet treat but don’t want to go rogue. I’ve lucked out and gotten them on sale a couple times though.

IMG_3322 IMG_3323I’ve enjoyed other flavors of these Trader Joe’s crisps, so when I saw these mango and ginger crisps I immediately knew I wanted to try them. These didn’t disappoint in the slightest. They are really good. I ate these crisps with everything from fruit, pepper jack string cheese, or yogurt as a midday snack. While they’re pretty low in calories, they are nutritionally neutral. The price point is reasonable in my opinion. One box is $4 and it has 5 servings, which makes the cost per serving about eighty cents. I would buy these again because the flavor is amazing, but not regularly since they don’t provide any beneficial nutrients. I will say that these are a great snack if you want something crunchy to nosh on.

IMG_3320IMG_3321When I spotted these at Publix, my interest was quickly piqued. Turkey jerky in a Jamaican jerk flavor?? Sounded very promising. While I loved the initial flavor of these, they left a somewhat salty aftertaste in my mouth. It’s possible that I could have misinterpreted what was in fact some other flavor as salty. I say this because when I checked the sodium content it wasn’t as high as I would have expected based on the taste. These have a chewy, but not super tough texture. The bag says two servings but I think this is pretty clearly a one serving snack. Nutritionally, it offers a good amount of protein (esp. if consumed as one serving – 22 grams). On the other hand, since I consider this to be a one serving snack, that makes the cost per serving very expensive at $4.69 per serving. Ultimately, I don’t think I would buy it again with its high cost and salty aftertaste.

IMG_3314IMG_3319I’m on the fence about these. They weren’t bad, but they didn’t taste amazing either. In contrast to the Jamaican Jerky, these had a pretty tough texture and they weren’t overly salty. Similar to the Jamaican jerky, however, this jerky offers a solid source of protein (especially if consumed as one serving). Country Archer also uses all organic ingredients, which may explain the cost. I got the honey dijon on sale for $3.29 but it’s typically around $6. Since I consider this to be a single serving snack as well, this makes the cost per serving pretty high at $3.29 ($6 if it weren’t on sale). In terms of repeat purchase, I would lean toward no if I had to make a decision. However, I’m open to buying these again because I think the taste could grow on me. I also like that it’s high in protein and quite low in sodium (esp. for a jerky). If I were to buy it again though, it’d probably have to be on sale.

IMG_3326IMG_3327These black bean snacks have a really good flavor to them. They have a light and crispy texture which I enjoyed. If you’ve tried the pea snacks that look like these but are green, these have the same texture. Price wise this snack is about as cheap as you can get. At $1.49 per bag with three servings per bag, the cost per serving is 0.50 cents. In the two bags that I’ve bought, both had four servings. Don’t you love it when they underestimate the number of servings?! It’s like the snack fairies smiled on you. Nutritionally, this snack has a good amount of fiber, owing to the fact that it’s made from black beans.  If you didn’t catch it earlier, these are definitely a repeat purchase for me. I think they would make for a great healthier snack alternative for kids compared to some chips or crackers.

Culinary Pursuits: Whole Wheat Chocolate Chunk Coconut Cashew Cookies

Walmart has these insanely addictive toasted coconut cashews. I discovered them last summer and was immediately hooked. Guys, they were so good that I had to stop buying them. I was crushing them. It was shameful. Each time I bought a new bag, I’d say this would be the time I practiced some self-restraint. Nope. So I cut myself off cold turkey. When I had some people over a few months back I thought this would be a great snack to set out. It got me thinking about how delicious these would be in a cookie. So that’s what I did. I put them in a cookie and tossed in some semisweet chocolate chunks so they wouldn’t get lonely, and the result was deliciousness.

The recipe is a simple one so you’ll be in and out of the kitchen in no time.  Now I made these two ways. The second time I made them I used half white whole wheat flour, and half all purpose flour. Ugghh…so good! The first time I made them I exclusively used white whole wheat flour. Still delicious but the cookie was somewhat denser. Either way you make these you’re coming out ahead. Those are pretty good odds in my book. But don’t take my word for it. Make them and taste for yourself. After you do let me know if you need my address to send the thank you card:)

Ingredients:
3/4 cups of white whole wheat flour
3/4 cups of all purpose flour
3/4 cup chopped coconut cashews (found at Walmart)
1/2 cup semisweet chocolate chunks
1 tbsp vanilla extract
1/2 tsp baking soda
1 egg
1/4 tsp sea salt (plus extra to sprinkle on top)
1/4 cup granulated sugar
1/2 cup packed light brown sugar
1/2 tsp cinnamon
1/2 cup melted coconut oil

Directions:
Preheat the oven to 350 degrees and line a baking sheet with wax paper and lightly spray. You can use a silpat mat instead if you have one (I need to go ahead and order one from Amazon).
Pulse the cashews in a food processor to chop. You can also chop them with a knife or break them apart manually.
In a large bowl combine the flours, baking soda, cinnamon, and sea salt
In a separate bowl add the egg, sugars, cooled coconut oil, and vanilla.
Add the wet ingredients to the dry ingredients and slowly mix until no dry pockets of flour remain.
Fold in the chopped cashews and the dark chocolate chunks.

Use a medium sized cookie scoop to portion out dough and then roll into a ball with your hand. Complete until all of the dough has been used. This should make between 15-18 cookies.
Bake in the oven for ~9 minutes. They may be slightly undercooked in the middle when you first take them out, but they’ll finish the last bit of baking as they cool. This way the cookies have get a soft, chewy center!

You didn’t think I forgot about you, did you? Of course, not! I had to bring you July’s Snack Easy round up. I planned to get this in earlier, but this month has been super hectic and virtually nonexistent. Yesterday it was the 4th of July and today it’s July 31st. I’m convinced the weeks in between didn’t actually happen. Why is time moving so fast??

Anyway, I had to come through for you this month because I’ve got some really good stuff on the list to share. For this month’s round up, we’ve got a fiber-packed granola bar, a string cheese, fig crisps, a Chobani flip yogurt, and an almond butter. Check out my thoughts on each below:

These are my bread and butter as far as breakfast staples go and I realized they could also make a great snack. My immediate older sister put me on to these a few years ago and I’ve been hooked ever since. I remember the first time she told me about them. I scrunched my face up when I saw the box. You want me to try a chocolate fiber bar?? Isn’t that like eating chocolate covered cardboard? No thanks. But eventually I caved and was almost instantly a fan. On the mornings that I do have my Kashi cereal for breakfast, I always have one of these bars with it. I end up looking like a hoarder whenever I go to Trader Joes because I always buy like 5 or 6 boxes at a time (I live between 20-25 minutes away from the nearest TJs so I  go once a month and stock up). God help me if Trader Joes decides to discontinue these. As you can tell from the name these have a huge amount of fiber, they’re chocolate covered, and really tasty. What more could you ask for?! One of these and you’re already a third of the way toward meeting your daily fiber requirement. Gotta keep things moving and grooving:) I’ve probably bought well over 100 boxes since my sis introduced me to them.

It’s hard to believe I have a string cheese on the list. As a kid, the only time you could even think about getting me to eat cheese was when it came melted on top of nachos or with macaroni and cheese. I’ve definitely come to the dark side! This pepper jack string cheese is really good. One stick has five grams of protein and only 80 calories. I’ve purchased this several time since I first bought it because it tastes quite good, it’s well-priced, and it’s a pretty healthy snack. Bonus points for string cheese being fun to eat.

I hate peanut butter but almond butter is my jam. I love my AB & J sandwiches as another breakfast option when I want to switch things up. Some months ago, I found out about this local nut butter company based in Durham and when I saw they had an almond ginger butter I knew I needed to try it. I spotted it in Whole Foods a couple weeks ago and quickly scooped it up. This was delicious with sliced bananas and a drizzle of honey as a healthier sweet treat (try it!). Also, for any fellow AB&J sandwich lovers out there, these help to elevate them to next level status. I had it with a peach pepper ginger jam and it was really good. Compared to other nut butters like Justin’s (which I love) this is not as sweet, but it does have these crystallized chunks of ginger throughout though that provide little bursts of sweetness. It’s not the cheapest of jars but almond butter tends to last me a while because I’m usually only using one tablespoon at a time on toast or with fruit. Nutritionally, I love the ingredient list. It’s simple with things I recognize and love – ginger, almonds, and sea salt. If you’re in North Carolina, you may be able to find one of these in your local Whole Foods. If not, they are available for purchase online.

Typically Chobani flips have all of these crazy mix ins, which are great, but the simplicity of this one caught my eye – pear and honey. How can you go wrong with that combo? Unfortunately, this one missed the mark. I was pretty surprised by it too because Chobani usually always comes through. Even with the pear and honey add-ins this was way too bland. I got these for one dollar at Harris Teeter, but I’m pretty sure that was the sale price. You could probably doctor this up by adding some jams but at that point you might as well just buy the plain version. Nutritionally, it’s a solid snack though. One serving has 11 grams of protein and only 140 calories. Even with the good price and nutritional deets I just can’t get past its blandness. I definitely won’t be buying this one again.

Bonus opinion: Yesterday, I had a practice writing session for my comprehensive exams and my writing partner had just bought some of these. She was about to try them for the first time, and I told her I wanted to hear her thoughts first before I colored her expectations. After one bite, she agreed that it was too bland. Back to the drawing board Chobani.

Sometime last year I stumbled across these fig crisps at World Market and fell in love. They’re awesome on their own, but they’re also badass with either a jam or a pepper jelly and some goat cheese or brie. Nutritionally, these are neutral. They don’t have much of the good stuff (protein or fiber), but they also don’t have much of the bad stuff (saturated fat, sodium, or added sugar) either. These would make a great party appetizer, snack, or a side to soups or sandwiches. I love a versatile purchase. Price wise they’re middle of the road – not cheap but not terribly expensive either. As a result, I would (and have) bought these again, but I don’t get them often.
